A critical tracking event, usually shortened to CTE, is a defined point in a product's journey where a business must capture traceability information about what happened, when it happened, where it happened, and which lot was involved. In food traceability, common examples include harvesting, cooling, receiving, shipping, transformation, and other handoffs or state changes that matter for traceback and recall. These event records often support HACCP verification by showing where a product was, what happened to it, and whether key controls stayed intact.
