Current attitudes to and awareness of British cheese is conflictingly poor, according to the British Cheese Board, although the market is worth a staggering 1.6 billion pounds a year. Britain sells more than 300,000 tons of Cheddar a year, but two-thirds of UK people don't know where it originally comes from; nine out of ten people surveyed didn't know where Stilton is made; and 64% didn't know where Wensleydale comes from. On average adults could name only three British cheeses, and often included foreign names such as Edam and Gorgonzola in their answers. Furthermore, 80% of those surveyed incorrectly assumed that France produces more varieties than Britain, whereas the reverse is true, with Britain producing more than 700 regional variants.
