Deep-fried turkey has gained a wide following throughout the United States during the past few years. But that Thanksgiving treat doesn't come without risk, according to Underwriters Laboratories (UL).
The not-for-profit product safety testing organization reminds consumers that gas-fired turkey fryers pose a number of fire and burn hazards.
"Many of these devices are unstable, have very hot exposed surfaces and lack temperature controls," says John Drengenberg, UL's consumer affairs manager. "Given that they also can contain 3 gallons or more of flammable cooking oil, we encourage consumers to be very cautious when using them."
UL recommends several important tips for reducing the risks associated with using turkey fryers:
- Always read and follow the manufacturer's warnings and instructions, both in the user's manual and on the product, before using a turkey fryer.
- Always use turkey fryers outdoors, well away from buildings, trees, garages, vehicles, and overhangs.
- Never use turkey fryers on wooden decks or other combustible surfaces.
- Place the turkey fryer on a flat, stable surface.
- Never leave the turkey fryer unattended. Most units do not have thermostat controls and may continue to heat the cooking oil until it ignites.
- Keep children and pets away from the fryer during and after use. Oil inside the pot remains dangerously hot even hours after use.
- Do not overfill the fryer. Use the manufacturer's instructions to determine the proper amount of cooking oil.
- Use well-insulated potholders or oven mitts when touching the pot or lid handles.
- Thaw the turkey completely. Water or marinade may cause the oil to boil over, causing a fire.
- The National Turkey Federation recommends thawing the bird in the refrigerator, allowing approximately 24 hours for every 4 to 5 pounds.
- Do not attempt to extinguish a turkey-fryer fire. Call 9-1-1 immediately.
To date, UL has not certified ANY gas-fired turkey fryers. However, some manufacturers sell turkey-fryer kits that include a UL-Listed gas regulator and hose assembly. The UL Listing Mark for these components is often displayed on the product packaging. This certification applies to the gas regulator and hose assembly ONLY and does not imply that UL has certified the complete turkey fryer kit for safety.
