Galangal

Galangal is used in Thai, Indonesian, and Malaysian cooking where it takes predominance over ginger, including the very popular Tom Kha Gai Coconut and Galangal Soup and Thai curry pastes. To use, wash and scrape off any woody parts before chopping.
