Announced December 22, 2015, researchers at Université Laval have demonstrated that a molecule in maple syrup - quebecol - has anti-inflammatory properties. The researchers carried out tests that showed quebecol curbs the inflammatory response of macrophages. The research depends on an vitro model for determining the anti-inflammatory potential of natural molecules.
